Description
The Kai Seki Magoroku Sashimi Knife is a traditional single-edged knife particularly suited to slicing fish and thin cuts of meat. The shape of the edge is different to typical Western-style Japanese knives, as this sashimi knife has a slightly concave edge on one side and an exceptionally sharp edge on the other. This helps the food to slip off the knife easily as you cut.
The single-edge blade is sharpened to 16° and is made from Japanese SUS420J2 blade steel, while the traditionally shaped handle is made from poplar wood.
