Simple, elegant, and effortlessly sharp, Benifuji knives offer a superb cutting experience. Much like a cook’s knife, a santoku is an all-purpose kitchen knife used for cutting meats and vegetables. The indentations on the granton edge help to reduce friction between the blade and the food to create a smoother cut.

Each Benifuji knife blade is constructed from AUS-8A blade steel that ensures excellent cutting performance, durability, and edge retention. The blades are subjected to a 3 Chamfering Process which reduces the friction between the steel and the blade for a smoother cut. The edge is finished with a special grinding process, resulting in a knife with a superior edge for effortless cutting.

The traditional triple-riveted handle is made from compressed and laminated Pakkawood, which is highly water resistant and very comfortable to hold.

Use & Care:

Shun knives are designed to be used in a smooth, slicing motion – never in an up and down “chopping”, piercing or stabbing motion. Imagine cutting wood with a handsaw, then slice through your food with a similar motion, intentionally pushing the knife forward and down as you slice, then pulling it back toward your body.

Do not use Shun knives on hard materials such as bones, joints, frozen foods or very hard vegetables like pumpkin. Using your knife on these or similar items can damage the cutting edge or cause the blade to fracture and break.

Care must be taken, as with all knives, not to subject the blade edge to sideways forces or twisting as this can result in chipping or cracking.
