Also known as brotforms or bannetons, proving baskets help the bread to maintain its shape during the proofing stage. The rattan construction creates an artisanal spiral pattern around the bread it rises. Line your proving basket with linen for a smooth surface, or simply dust it with flour to get that lovely home-made spiral look!

Before each use, the Proving Basket should be firmly tapped to remove any excess flour or left over fragments remaining in the basket. If required, spray the Proving Basket lightly with cooking oil and dust with flour.
Brush the basket every 3-4 weeks with a dry brush.
Every 6 months, or more often if required, handwash the basket with a brush and warm water. After washing, place the basket in the oven to dry for 20 minutes (120-130°C). Then place on a rack at room temperature to completely dry. After thorough drying, spray with cooking oil and dust with flour.
When storing, place the Proving Basket on an airy surface to dry out, do not pile baskets up when damp. Do not store in plastic bags, allow basket to breath.
