An usuba is a traditional Japanese knife with a single bevel edge designed for cutting vegetables. The literal translation of usuba is thin blade – ‘usui’ is the Japanese for thin and ‘ba’ is derived from ‘ha’, as in hamono, which means blade or edge tool.  The flat blade design makes the usuba more suited for push cutting or chopping rather than rock chopping.

Left-handed cooks should be aware that they may find this knife difficult to use because of its single bevel edge.
